Can someone explain to me or suggest a tutorial that explains how to do a delta load with MDM ver 11? I have gone through the IBM bootcamp course but that topic was not covered. I have the bulk load process down pretty well but need to know how a delta load differs. Thanks!

Here is an MDM 11 link about Understanding the different approaches to loading data . I am not aware of any tutorial.

It is generally recommended IBM best practice to always interact with MDM via the services layer rather than to load or update the tables directly.

If you have DataStage then use it to isolate your delta records for the new and changed data, format them into the transaction based XML layout that the MDM batch processor expects, create text files, and feed them to MDM.
